Po 15-dniowej fermentacji wino przelane jest do francuskich i sławońskich beczek na 13 miesięcy.

The Casanova di Neri 2018 Rosso di Montalcino Giovanni Neri offers a pure window onto Sangiovese from this hamlet in southern Tuscany. Indeed, the grape here is called Brunello or "Sangiovese Grosso" precisely because it tends to offer dark ("bruno") fruit flavors and rich intensity in its most natural state. This is a naked and transparent wine that allows you to accurately taste the so-called bruno in Sangiovese without too many extra bells or whistles. There are savory and wild characteristics with forest fruit, bitter almond, dried herb and balsam herb. That initial wave of aromatics is followed by tilled earth and subtle spice. The wine is named after Giacomo Neri's father, who shares the name Giovanni with his grandson."
